Austintatious Peanut Brittle

Peanut Brittle is a fantastic treat and is really pretty easy to make. This recipe has only a handful of ingredients and takes about 15 minutes to cook! It has been my experience that you should probably make at least two batches because this Peanut Brittle goes fast!

Make sure and measure out the ingredients before you start cooking. You will not have time to measure once you start. This recipe calls for you to react quickly between steps!

Ingredients:

  • 1 cup sugar
  • ½ cup light corn syrup
  • ¼ teaspoon salt
  • ¼ cup water
  • 1 cup peanuts
  • 2 tablespoons butter, softened
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

You will also need a foil lined baking sheet.

Special Cooking Utensil: Candy Thermometer
Brittle-2

I suggest purchasing a candy thermometer when attempting to make Peanut Brittle or Pecan Pralines. The temperature is very important and could be the difference between your brittle turning out great and not turning out at all!

Cooking Directions:

Start with a heavy saucepan on medium heat; combine sugar, water, corn syrup and salt then bring to a boil.

Stir until sugar is completely dissolved.

Once the sugar is fully dissolved, stir in the peanuts.
(You can use any kind of peanut, I’m using Spanish peanuts).

After you stir in the peanuts place the Candy Thermometer on the side of the saucepan. With the Candy Thermometer firmly attached. Continue cooking, stirring frequently.

Stir until the temperature reaches 300 degrees, or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.

As soon as the temperature reaches 300 degrees, remove from heat and immediately stir in butter.

And then stir in baking soda and vanilla.

After you add these ingredients stir vigorously. You will notice a consistency change.

The instant you have everything completely mixed, pour immediately onto the aluminum foil!

Quickly spread the Peanut Brittle out, making sure to evenly disperse the peanuts.

Once you have evenly spread the Peanut Brittle allow to cool completely for about an hour.

When the Peanut Brittle has cooled completely you should be able to lift the cooled Peanut Brittle off the foil.

The Peanut Brittle should be stiff and ready for cracking!
(This is not a magic trick! ☺ )

The last step is to crack the Peanut Brittle into bite sized pieces.
